1 /2 Cup Organic Buckwheat Flour
1 Tbsp Coconut Sugar
1/2 Tsp Baking Powder
1/8 Tsp Salt
1/3 Cup Unsweetened Cashew Milk (or dairy-free milk of your choice)
1 Tbsp Extra Virgin Olive Oil
11/2 Tbsp Vanilla Extract
1 Egg
1/4 Cup Strawberries, quartered
1/2 Cup Organic 85% Dark Chocolate Chips
Lightly grease a skillet and pre-heat on medium heat.
In medium-sized bowl, whisk together the Buckwheat Flour, Sugar, Baking Powder, Cinnamon* and Salt.
Add Milk, Oil, Vanilla and Egg. to the dry mixture, and stir until combined.
Fold in 1/2 the Strawberries and 1/2 the Chocolate Chips.
Scoop out 1/2 of the batter into heated skillet, and spread it out to a circle.
Cook for 2-3 minutes, or until edges start to cook and a few bubbles appear on top. Flip and cook for another 2-3 minutes.
Repeat with the remaining batter until you have 2 delicious pancakes.
Top with remaining Strawberries and Chocolate Chips.
Serve with maple syrup (Optional)
