BUCKWHEAT PANCAKES WITH STRAWBERRIES & CHOCOLATE CHIPS

  • 1 /2 Cup Organic Buckwheat Flour

  • 1 Tbsp Coconut Sugar

  • 1/2 Tsp Baking Powder

  • 1/2 Tsp Organic Cinnamon*

  • 1/8 Tsp Salt

  • 1/3 Cup Unsweetened Cashew Milk (or dairy-free milk of your choice)

  • 1 Tbsp Extra Virgin Olive Oil

  • 11/2 Tbsp Vanilla Extract

  • 1 Egg

  • 1/4 Cup Strawberries, quartered

  • 1/2 Cup Organic 85% Dark Chocolate Chips


  1. Lightly grease a skillet and pre-heat on medium heat.

  2. In medium-sized bowl, whisk together the Buckwheat Flour, Sugar, Baking Powder, Cinnamon* and Salt.

  3. Add Milk, Oil, Vanilla and Egg. to the dry mixture, and stir until combined.

  4. Fold in 1/2 the Strawberries and 1/2 the Chocolate Chips.

  5. Scoop out 1/2 of the batter into heated skillet, and spread it out to a circle.

  6. Cook for 2-3 minutes, or until edges start to cook and a few bubbles appear on top. Flip and cook for another 2-3 minutes.

  7. Repeat with the remaining batter until you have 2 delicious pancakes.

  8. Top with remaining Strawberries and Chocolate Chips.

  9. Serve with maple syrup (Optional)
