PUMPKIN PIE CHIA PUDDING

  • 1 1/2 Cup Nut Milk

  • 3/4 Cup Pumpkin Puree

  • 4 Tbsp Date Sugar or Sweetener of Choice

  • 1 Tsp Vanilla Extract

  • 1 Tsp Cinnamon*

  • 1/8 Tsp Ginger

  • 1/4 Tsp Nutmeg

  • 1/8 Tsp Cloves

  • 1/3 Cup Chia seeds

  • 1/3 Cup Walnuts, chopped

  • 2 Tbsp Whipped Cream (Optional)

  1. Whisk together Milk, Pumpkin, Sugar, Vanilla, Cinnamon*, Ginger, Nutmeg, and Cloves.

  2. Stir in Chia Seeds.

  3. Spoon into 4 individual short glasses or cups.

  4. Refrigerate for 2 hours or over night.

  5. Top with Walnuts, Whipped Cream (Optional), and Cinnamon*.
