PUMPKIN CHILI


Prep Time 20 mins - Cook Time 25 mins - Total Time 30 mins Calories 432 - Serves 8, Freeze Unused Servings

  • 1 Tbsp Extra Virgin Olive Oil

  • 4 Cloves Garlic, minced

  • 1/4 Cup Celery, chopped

  • 1/4 Cup Red Onion, chopped

  • 1/4 Cup Shallots, chopped

  • 2 Lbs Ground Beef

  • 1/2 Tsp Salt

  • 1/4 Tsp Pepper

  • 3 Tbsp Chili Powder

  • 2 - 15 Oz Cans Pumpkin Puree

  • 1 - 14.5 Oz Can Diced Tomatoes

  • 1 - 15.5 Oz Can Black Beans, drained

  • 1 Cup Beef Stock or Beef Bone Broth

  • 2 Tbsp Adobo Sauce from canned Chipotle Peppers - Optional

  • 1/2 Cup Shredded Mexican Cheese Blend

  1. In a large pot heat the Oil over medium high heat.

  2. Add the Garlic, Celery, Red Onion and Shallots, cook 3 minutes

  3. Add the Ground Beef, Salt, Pepper,Chili Powder, and Sirtfood Spice Blend*.

  4. Cook, breaking up Ground Beef, until no longer pink, about 5 to 7 minutes.

  5. Lower the heat to medium and stir in Pumpkin Puree, Diced Tomatoes, Black Beans, Beef Stock or Broth and Adobo Sauce (Optional).

  6. Cook until heated through, lower the heat,, simmer for 10 minutes.

  7. Serve, top with Shredded Cheese and other toppings of your choice.

Since this recipe serves 8, freeze the remainder in a number of smaller containers to accommodate future serving sizes.
